Hello from Colorado!

I will soon order the 3-D.

I have used a cheap Masterbuilt electric smoker in the past, with success, and have struggled for YEARS to smoke on the husband's propane grill. 

Recently, the Colorado winds prevented the grill from controlling temperature for the last time.

I've researched the brands and have settled on the SI 3D; without a cart for now.  I like the temperature range and am beyond excited to cold smoke cheese, veggies and fish. 

I think the 3D will be perfect for my needs; as the kids are pork and beef lovers.     

Thank You to all who have contributed to this forum!  I am a researcher and the wealth of knowledge here is amazing.

From a fellow researcher... I agree!  Did my first run on my 2D yesterday.  Had amazing results, and the amount of work was ridiculously low.  Enjoy!!!

Welcome from North Dakota Deb! You are going to love your #3D, and you are a step ahead already by finding us here.

It is awesome to continue to see the number of women join the group as well.

I just pulled out a pack of smoked pepper jack that has been aging in my fridge for 2+ years and it is amazing how much the depth of flavor changes after it is aged for a year or two. This cheese tasted like a well-aged cheddar with the pepper jack flavor. Awesome!

Welcome Deb from another gal, in Wisconsin. Our cold winters offer lots of opportunity for cold-smoking cheese and fish.

Thanks all again for the welcomes!

3D arrived last night and I have it seasoning as I type.

I ordered on 2/13, so in time for the Valentine's Promo :-), so my 3D arrived with a cover, rib hooks and a chip cover. 
From SI, I also ordered the cold plate and another drip pan.

Per the LazyQ ebook, I have also ordered:
BBQ gloves and tongues
Frogmats - 3 of the big ones with the intention of cutting them in half (cheaper on ebay than amazon - go figure) 
Disposable, mini loaf pans

Do I need more cavity or meat temp probes?  The 3D came with one meat probe that is intergrated into the PID.
 
Tomorrow, I am going to make jerk chicken with bone-in thighs. 
Thursday, I am going to make baby back ribs and I think they will be the first perfect ribs EVER that I've made.

Deb - Equipment wise, I think you have the bases well covered.  As for an additional thermometer with meat probe, they do come in handy when doing multiple smokes at the same time.  Otherwise, you are all set.  Enjoy!
