Welcome back, Tony!  Glad to hear your doing better!

This 3 day chuck roast was started on Thursday and will be coming out of the bath in just a little bit!  131F for 72 hours!

I have to say... this was the best Chuckie that I've cooked so far. Texture was fantastic!  I think we could have cut it with a butter knife!  I used a ribeye rub on it that was great!  Reverse seared it for 35 sec on each side. Can't wait for leftovers!

This looks good! Inspiration, as I am awaiting the delivery of my Anova on Tuesday! So thank you for posting good pics and a cut of meat that I can look for to try out!

You won't be disappointed!  Start with a nice prime ribeye at 129F for 3-3.5 hours. Then sear it for 35 seconds on each side. That will be a great first cook!

Which metal rack are you using in the water container? Looks adjustable?

That is a Lipavi sous vide rack. It is adjustable as far as how many dividers you add to it. They are too expensive for what they are but luckily they were given to me as Birthday or Christmas gifts. I do really like them. I have a large one and a small one (in picture above). If you decide to get one (or convince someone to get you one) be aware they come in 2 models. All stainless or a chrome (I believe) models of the same sizes. Obviously, the stainless is more expensive but won't rust. Get that one!

If you just want to keep something from floating, put several butter knives in a separate ziplock bag, then clip that bag on top of your food bag. It's plenty heavy enough to hold it down.

They are and I'm too thrifty to buy one. But I always tell everyone not to get me any gifts. And when they protest, I pull out stuff that I normally wouldn't purchase for myself due to principle. Luckily, I now have a small one and a big one. The big one came the Christmas after I made my brother a ribeye and I had too many steaks to fit on the little one. I don't think I even mentioned it.

The big one was about $120... which is completely absurd. I couldn't even suggest that darned thing. But I do love it!
