Title: Has anyone tried smoking at 325?

Hi All-

So we do not like rubbery skin. So here's my question: we have a 2D and the capability to smoke at 325. Has anyone done a turkey at that temp? If so, do you have any recommendations on wood (type and weight) and preparation of the turkey?

I'm simply thinking of rubbing under the skin and then buttering the skin, tying up the legs, and smoking breast side down with a little butter and rub in the cavity. Another option might be to spatchcock the turkey and use some interesting herbs on the skin as well.

I'd love to hear if anyone has tried a turkey at this higher temp and how this has affected the skin.

I tried turkey at high temp and it made the skin look burnt.  It might have been my rub but I've just gone back to 250.
