Title: Brisket was off the hook good..
Post by: puddle jumper on April 12, 2017, 12:54:48 AM
I know there are some brisket masters on here but I had to share this one with you guys,, it turned out awesome, my best so far.. and probably the best I've ever had mine or others.. ;)
ok details,,

Took this packer brisket, heavy salt, pepper, rubbed it in then a little chipotle tabasco on the top, put it in a vacuum bag and added about1/2 cup of soy sauce, then pulled all the air out...12 hrs later it went in my #2 for about 9 hrs at 225 till it was 195, with some peach wood,,, " two 2" chunks"

Put it on the smoker on the top spot with a foil boat under it to catch the drippings for 5 hrs, then dropped the brisket into the boat with the drippings for two more hrs, then a little sweet sticky fingers BBQ sauce on top and wrapped it until done at 195.. pulled it , wrapped it in a towel for a 1 hr then sliced,  juice everywhere.   lol,,   and man was it good...nice pull and very tender.  Great flavor.
Im a proud papa..

That looks so good. I think I could eat half of it by myself. 😛

That is a real bizarre looking cut for a brisket.  Did you divide a small flat?

Dave, I thought the same thing,,, mama picked it up for me at Kroger's,  it was about the size of a pork loin when it went in , I'm assuming they cut the flat into two pieces long ways..
