this is even easy by lazyQ standards
i bought a couple point cut corned beefs
soaked them in plain water over night
put some pickling spices including the pack that comes with the corned beef in the blender to grind it up
coated the meat
put a little brown sugar on top
smoked to 180 with 5 ounces of cherry wood
wrapped it in foil till it cooled off enough to go in the fridge an hour or 2
heaven
several years ago i bought a professional deli slicer from a places that was going out of business, one of the best purchases i've ever made
sliced that meat paper thin after a night in the fridge

i love mine have used it constantly over the years
get a good one and take good care of it.. replacement blades are expensive but i've never had to buy one so far knock wood
cheap ones don't cut as good and don't last

it's made by abamaster
some of the even higher end ones are totally automated..you don't do anything but set it and watch.. never tried one of those i think hands on gives better control .. just watch your finger tips

If you want to do yourself a real favor go to amazingribs.com/recipes/beef/close_to_katzs_home_made_pastrami. This is an outstanding recipe and method that produces the closest to NY Jewish Deli pastrami that you will ever find. Wish I could provide the link but I'm an old fart and computer dinosaur and I don't know how to do it. But I can guarantee that checking this out will be well worth it.
