just looking for some ideas .. we like to mix at home rather than get store bought

I believe you get better results mixing your own. I highly recommend a mortar and pestle for grinding spices especially peppercorns. It really brings out the flavors of the spices, very different from a food processor.

My go-to rub for "most" things is SPOG. Salt, Pepper, Onion powder, and Garlic powder. I then add a few other things as I feel.
I took one cup of each spice, mixed it up and put it in empty spice bottles. Pulled the label off and grabbed my sharpie and wrote "SPOG" on it. I can add chili powder, paprika, or whatever I want and still have my base rub.

getting ready to put a pork butt in later on today for our anniversary tomorrow.
brined it over night,
decided to try dusting it with seasoned salt and then overcoating that with some brown sugar.
i figure at the very least it's gotta be good

Try meathead memphis dust. Its not spicy, its just good.

Reviving an old post, but my little one is also not a fan of the spice, so I'm curious what ended up being your go to... Thanks...

My standard rub is 2 parts kosher salt, 1 part onion powder, 1 part garlic powder. If I want a little pepper flavor then I'll throw in anywhere from 1/4 to 1 part black pepper.
