Title: Food for football

I am thinking of cooking some ribs for Sunday's  game (Falcons - Green Bay). We really like GB and their fans but needless to say hoping for a Falcons win. The best way to enjoy a weekend is smoking meat and watching football with friends and family.

David, my man! Good to see a fellow Falcons fan on here! I think we will dominate Sunday and be on our way to the Super Bowl! At least that's what I WANT to happen. I don't think it'll be a low scoring affair either ;) I hope A-Rod doesn't outgun us, he's been on a roll lately but I trust in MR2 to get the job done :)

Good luck on the ribs, post some pics if you have a chance to take any. If you're like me, you'll be too busy to get any pics during all of the commotion.

Oh yeah.....GO FALCONS!!

Two good matchups in the championships.  Green Bay and Pittsburgh are both on streaks and both are going up against teams with better records.  Hard to say who's going to win.  It would be nice to see Atlanta win it all considering the other three have won recently.

Kari - The Falcons are over due and deserve this one. I should be a fun game. BTW, I have an old die hard Cheesehead living across the street from me. Might invite him over for some ribs.

Man, I'm getting ganged up on here! Where's DM Tony when I need him! I can relate to Atlanta's plight. Packers fans lived it in the 70s, 80s, and 90s. But Rodgers isn't getting any younger, and with his talent, he should have had more titles (stupid Brady and his 4). Anyway, if Atlanta wins I will be rooting for them in the SB. Getting tired of NE winning all the time for sure. And the controversy that seems to always surround them. I like the Steelers as a team in general, but not when they are playing an NFC team. ;)

I will say that if GB wins, I will be behind them. Great team, well ran, well coached, one of the greatest QBs to ever play the game. They are a very dangerous team and Atlanta sports in general seem to be cursed so it will disappoint me if they (the Falcons) let me down yet again but it will not surprise me. As for NE, it's a dynasty. They have been so good for so long, controversy or not, it's amazing. I would LOVE to see the Steelers get past them though and to be honest, I think they will!

I agree with Jason. While I much prefer the Falcons win this weekend, I will be pulling for GB  in the big game if they beat us. Happy smoking to all!

+2 I will get behind the Packers if they beat the Falcons. I don't want to see either a Steelers or a Patriots win the Superbowl.

And while I agree that Rodgers is a great quarterback and probably a future Hall of Famer, I didn't realize that he was such a whiner. I don't watch many packers games because the stupid Vikings are on our networks every week (ugh!!!), so I don't get to watch their games that much. He whined so much he had the refs calling stupid crap the whole game. OK, that is enough of my own whining. Go NFC!!!

I knew the Cowboys would lose. I was actually surprised they made it so close! Atlanta is much better than Dallas. Dallas had an easy schedule meanwhile Atlanta had the hardest schedule in the NFL this year so I think they're ready to beat the Pack. Add to that the fact that GB hasn't had a bye in 15 weeks and are on the road. It's going to be a tough out for them and I fully expect Atlanta to not only win but on "paper" it shouldn't even be close. That's why they play the games though! Aaron is an excellent QB and is hot right now but Matt isn't exactly struggling, lol. The Atlanta offense is humming like a fine tuned machine, Matt even got to sit out a couple 4th quarters toward the end of the year. I didn't see Rodgers or Brady doing that ;)

So......make peace with it Tony. Be prepared to root for my Falcons when they go to the big dance :)

Here's to a good, injury free game!

I will be smoking a tri-tip tomorrow, but won't have much interest in the games! BARRETT-Jackson should provide some entertainment though :)

You guys seem to forget that it does not matter if your team wins this weekend. Because soon after that they will have to face the greatest QB and greatest football team in the history of the NFL.

Patriots have to get by the Steelers first. That isn't a foregone conclusion just like in my case. Falcons should beat the Pack, Pats should beat the Steelers but it wouldn't surprise me to see a GB PIT Superbowl! Anything is possible! That's why I love football!

As for the food, we can all agree on that, lol! It looks like ribs are the theme this weekend. I am pressing the easy button and making brisket chili for my guests. We are going to play Cards Against Humanity before the game, eat a few snacks while we play and then brisket chili with jalapeño cheddar cornbread during the game. Hopefully everybody will enjoy the day tomorrow!

We know that GB is limping into this game with a lot of injuries.  Does Atlanta have any significant people missing the game?  We've seen what Rodgers looks like with no weapons at receiver before.   :P

Well as far as offense, Julio's turf toe is something he's battled most of the season but he'll still play. Other than that, there are no injuries. The last time they played each other Atlanta was without part of their 2 headed running back monster, Tevin Coleman. He's back. On defense we're missing our supposed "shut down" corner, Desmond Trufant. I hate that term BTW. Shut Down corner my tail, lol. Richard Sherman is supposed to be a shut down corner yet Julio eats his lunch on the regular. He gets caught holding Julio repeatedly but more often than not he gets away with it. The last time they played, the Falcons and GB both had 3 sacks each. Two of Atlanta's came from Adrian Clayborn but he had season ending surgery. Green Bay didn't play Clay Matthews in the first game, I don't know his status for tomorrow.

Both teams have injuries just like both teams in the AFC have injuries. I think Green Bay may be the worst off of all and I'm sure when the Falcons win, the pundits and talking heads will attribute it more to the Packers being gimpy than Atlanta just winning. It's how Atlanta is treated by the media, always has been. So......we shall see tomorrow! RISE UP!!! ;)

We (Pack) do have significant injuries to our starters and "star" players. But...every team can make that claim at this point in the season. And...the Pack just keep pulling it off somehow. They are scrappers. I think the Pack is in worse shape injury-wise than anyone else in the running. That being said, I will be having baby backs, with Famous Dave's rub with added brown sugar. (That is very unusual, because I always make may own rub.) Fresh baked multi-grain rolls and cucumber salad. Go Pack! ;D

Very true. I like to use the example of when there is a lane closure, and you need to merge to a single right lane. People will merge and get in line miles ahead of time, even though there is a long stretch of open lane on the left. We wait our turn and don't butt in line. And even if you do accidentally get in the wrong lane, people will happily let you back in, unless of course you have Illinois plates and you try to go all the way to the front before merging in. Then we unite against that guy! ;D ;D I've never seen such politeness and patience on the road in any other city.

The ribs look great, the Packers? Not so much. Like I was telling Tony and others on Facebook, the body language and facial expressions on those boys showed they were tired and just wanted to get out of the GA Dome and go home. I have NEVER seen Rodgers that way. That first half just broke their spirit I believe. I'm all for the Falcons going to the Super Bowl but I wasn't expecting the Pack to be so disinterested in winning. I will give credit to Jordy for suiting up, the man is a warrior! Stupid for GB to allow their star to risk severe injury, but a herculean effort just to be out there running. It was amazing! He must've been on some GOOD stuff, lol!

The thing is with the great franchises like Green Bay, New England, San Fran (of old), Pittsburgh and even Dallas (ugh!) is that there is a history of winning, a culture. There's also trophies in the trophy case! So, the odds of GB just falling out of grace and becoming the Jaguars are slim to none, lol. Your team will be competitive for a long while. The Falcons, on the other hand, have been perennial losers with a couple of bright spots along the way so this is all new to them as well as the fans. I am going to enjoy this success and this feeling for as long as I can for it may be a one off deal. We went to the Super Bowl back in 99 under Dan Reeves and it took us until now to get back! Strangely enough with another head coach named Dan, lol. What's up with the Dan factor? Hmmmmm. At any rate, I hope for a Falcons Super Bowl victory. I will be blown away to say the least!

Kari those are some good looking ribs. My ribs turned out tender and moist but everyone got to them before any pictures were taken. For Falcons fans it was a good game but I agree with Tony, GB will be back before the Birds based on our history.

If the Packers were going to take a dive like this Crosby should have just shanked that last kick in the Dallas game. I am not saying Dallas would have been the Falcons, but I know they would have given them more of a game then the Packers did.

I am a Falcons fan all the way now!!!

And go Packers next year!!! I do like the Packers because I despise the Minnesota ViQueens.

I have not heard one negative thing here today, either in person by fans, or in the local news media. The fact that we were 4-6, I think everyone was grateful for the extended season, and just the chance at the Superbowl when all seemed lost early on. Lots of praise from fans for a great season by the Pack. I don't know if Dallas would have been a better match-up, or if the Pack were that bad, but I don't think either one gives enough credit to ATL, which just has a good and balanced team this year, and would have kicked butt either way.

Additional support for the people of Madison being the nicest people on earth. We also have a lot of good fans that support their teams win or lose. In my house we are GA Tech fans, therefore we have much experience on being gracious after a loss. Hats of to the GB fans!!

The Falcons put a good ol' fashion whoopin' on my beloved Packers, for sure!  Now that the season's over, I'm a huge Falcons fan!  Of course, I always say that my favorite football team is whoever is playing the Cheatriots Patriots!  I'd love to see Matt Ryan take Deflator Brady down a notch!

It should be a fun game. I obviously am rooting for the Falcons and I have faith in them to win but it will be a tall order I am sure. The Pats are the darlings of the NFL so I am just praying for a well called game and that the refs don't do the usual and show HUGE favoritism to the Pats and Brady. The GB game was called pretty good, both teams got away with a few holds and such but that's normal. If they called a penalty every time they saw one, the game would take about 6 hours to play, lol. If it gets called even, I like the Falcons chances. I don't think the Pats have come up against anything like the Falcons this year so they might get quite a shock if the Birds are on their game. I expect the Falcons to be laser focused, these types of opportunities don't come along very often.

Tony & Kari and all of you rooting the Falcons on, I am glad to know we have a few more on our side!

I don't know if they like my food or that they are just prefer to relax and let me do all of the work. Hoping for a Falcon's win.

I had contemplated doing burgers but it turns out the boss (my wife) has the menu set. We will be having buffalo chicken quesadillas and cheese quesadillas for the one guest that is a vegetarian  ::)

Also the boss is making up some beer cheese and pretzel bites, both really easy to make and then we're having tater tochos and pepper stout beef sliders. All finger food. That's our contribution to it. Our guests will bring some stuff too, usually stuff like fruit trays and dessert of some sort, maybe some dips and chips. All easy but good!

Good appetizer and easy.  Using a mini muffin pan, put 1" chunks of your favorite hot dog and cover with Marie Calendar corn bread batter.  Makes a very tasty corndog bite.

I love corn dogs! Definitely gonna try this. My favorite hot dogs are Nathan's, or Best's kosher beef. Or polish sausage in either of those.

Never heard of Sahlen's, but at $30 per pound, I'm going to have to pass on those. ;D They must be pretty great though at that price. I'll have to keep my eyes peeled for them in specialty stores around here.

Publix started carrying them all over the Southeast so now I can get them fairly inexpensive. They cost no more than Hebrew National or Nathan's. Before then I would go to a place in Atlanta that serves them but they'll sell you a 5lb bag of them for $35.00 or so.

To get the right cornbread to hot dog ratio the fatter the dog the better.  Nathans work well.  I like Hebrew Nationals on a bun but the are too skinny for the appetizer bites.

The only reason to split the point is if you were planning on making burnt ends and then I don't split until the smoke/cook time is almost over.  Lots of opinions on doing brisket our own way.  Might be better for argument sake to tell us what you were thinking and we can tell you if there is any holes in your plan.

Splitting it for the most part is determined by whether you can fit it in your smoker whole or not. The general preference is to leave the brisket whole whenever possible. Some people with a #2 have been known to put it in whole, even though it might be touching the back and the door. It will shrink. My concern with this is making sure it is not touching, or dripping on the box probe on the back wall. I have a #1, so I cut it in half. I actually get excellent results this way in the #1. I place the flat fat side up on an upper rack, then I place the point on a rack below, fat side down. The point can take more heat, and shields the flat. I like to take the flat to 195, and the point to 200-205, and they both seem to be done at the same time with this arrangement. If you are able to leave it whole, and have an extra food probe, it is helpful to probe both the flat and the point, and decide on a happy medium for final temperature.

Cutting it in half to fit a small smoker is not technically removing the point as the point is just a knob on top of the flat that runs the entire length of the packer.

Cutting it in half to fit a small smoker is not technically removing the point as the point is just a knob on top of the flat that runs the entire length of the packer.

Good "point". When you cut it in half, one half is flat only, the other half is point and some flat.

Thanks again for the details. The brisket is 20+ inches long. I will look into separating the flat from the point or cutting. I have heard of people partially slicing the thin end and folding it over. Is that really an option.

Here is the pre-trimmed brisket. I am going to try Kari's method of cutting it in to two pieces to fit in the smoker. I will inject it tonight (I rarely inject anything other than a turkey), then use a dry rub tomorrow before a Saturday night smoke. Thanks for the suggestions.

Yeah...I wouldn't do the fold-over thing. It will be fine cutting it in half. Do you have 2 food probes? If you only have one probe, I would measure the flat. The point is much more forgiving, and can go well past 200, even up to 210 with no ill effects.
