Besides setting the initial/hold oven temperature, are you programming multiple steps?

Yes, I have.
I have a summer sausage that goes through four different steps.
The first three are stepping up temperatures for various time intervals, and
the last step ramps up until internal temp is reached.

Without fail I make program 2 a 6 hour at 140 in case something odd happens on overnight smokes.
