Have an Amish market close to home where they sell free range rabbit. Anybody ever smoke a bunny?

Not here but if I did, I would wrap it with a lot of Bacon!!!

Rabbit is crazy lean and lean meats typically don't smoke well.

Or involve a short smoke bath and braised to finish.
