Time again for some great smoked thick cut pork chops. Start by bring extra thick cut pork chops for a minimum of 4 hours. Rinse well and stuff with stove top stuffing and 1 tube of browned Jimmy Dean sausage. Hit with a light coating of your favorite rub and then into the smoker at 225 until you hit an internal temp of 140 - 145. These are very moist and tender chops.

They were excellent! My family loved them. I used cornbread stuffing mixed with my own homemade breakfast sausage. I dusted them with my own rub as well. They were smoked with pecan, and only took 1.75hrs at the temps you suggested. Thanks again..

Guessing 1"+ to 1 1/4". Just the big pack of thick cut from Costco. If someone had a loin, they could probably cut & butterfly their own desired thickness.
