This is an easy dinner and reheats and freezes well.
Smoked Turkey/Chicken Soup
Ingredients:
1 green pepper, diced
1 large sweet onion, diced
2 T minced garlic
5 medium russet potatoes, peeled/cubed (I use red potatoes with skin on about 10)
2 carrots sliced thin or grated (I like them grated fine)
2 bay leaves
1/2 teaspoon black pepper
½ t oregano
1 t salt
½ t celery salt
Enough chicken broth to cover to cover everything (about 48 oz)
½ package of Sazon Con Azafran (Sazon Goya) *you can also use 1 t curry powder
2-3 cups smoked chopped turkey or chicken
2 lbs of great northern beans (pre-cook beans and discard water)
½ cup grated cheese (I like the Mexican blend add this in the end)
Directions:
Combine turkey, beans and all ingredients except the cheese and starch into a large pot. Cook over high heat and bring to a boil. Reduce heat and simmer 3-4 hours, stirring occasionally.
You may need to add some additional water.
After 3-4 hours make sure beans and potatoes are tender, add additional salt as needed, then add starch to thicken and cheese.
*Add starch as desired to thicken!

Hey Bob,
Many of my recipes, I am always making small changes and some I just wing it. This one is pretty spot on, but feel free to add this or that and overall you will end up with a good tasting soup!

Greg, that soup looks so good, I almost wish I had a cold - bet it would cure it in a flash! ;)

Not sure it will cure the common cold, but it sure does taste good with sourdough bread.
