Title: First Smoke (Jerk Chicken Wings)
Post by: gregbooras on March 18, 2015, 05:27:48 PM
I just finished my first smoke on the middle kid and wow, nothing short of amazing. The wings were juicy and pulled easily from the bone.

Recipe:
3.5 lbs of chicken wings
6 t Grace Jerk Seasoning
3-4 T Olive Oil

Mixed all items in a large 1 gallon bag and put in the refrigerator for 6 hours. Removed and brushed with Olive Oil and place in smoker on the second rack slot from the top. Added 1.5 oz Cherry Wood and 1.5 oz of Mulberry Wood, set smoker to 250 degrees and left for two hours.

Pulled wings (temp around 165 degrees) and placed on indirect cast iron plate (grill heated to 675) for about 1 minute per side.

Served with homemade slaw and Wasabi sauce with horseradish and ranch dressing.

Next bbq event will be ribs this weekend!

Looks great, grilling on the iron helps the skin a ton I'd bet.

Will try.

I was really happy with the results, my wife had seconds, pretty unusual.

Next time I will brine for an hour or two and see how this affects the results, but final on the grill is must for the skin.

Well done, Greg!   Congrats on the maiden smoke, and ribs will be a great second smoke.

Hey Steve,

Thanks I bought some Berkshire Ribs for tomorrows night dinner along with two baked potatoes.

I will post they come off the smoker!

Ditto on the "Well Done" Greg.. Wings look great. I'm a bit jelous as condo rules say NO grills  >:(  but Mom's oven should do the trick..
Congrats  :)
