Title: Sweet with a bit of Heat

I have been perfecting this BBQ sauce for years and three years ago said this is it. I know it has lots of ingredients, but the end game is worth it.

Greg's BBQ Sauce

Ingredients
•   2 cups Ketchup
•   1 t Garlic Powder
•   1 t Onion Powder
•   ½ cup Brown Sugar
•   1/3 cup Apple Cider Vinegar 
•   1 ¼ cup Apple Juice
•   2 T Yellow Mustard
•   ½ t Cayenne Pepper
•   2 T Lemon Juice
•   2 T Tamarind – Date Sweet & Sour Sauce  (Find Indian Grocery Store)
•   ½ cup bourbon whiskey
•   1 T liquid smoke
•   ¼  t black pepper
•   ½ t sea salt
•   6 oz Cento tomato paste

Directions
Mix all ingredients together and bring to a boil, then simmer in a saucepan for 30 minutes. Allow to cool and then store in refrigerator. Flavor will improve overnight. This will keep for a month or two in the refrigerator.

This is really good sauce, I have been working on this recipe for years and finally, I don't think I can make it better.

We almost had a BBQ emergency today, open the refrigerator and no sauce.

Since we are having pulled pork, I had to make a new batch of sauce, here are some photos!

Lot of good ingredients Greg. I still haven't tried it yet, but I will. I had to laugh at the pic of all the stuff. Guess we all look like that when we do our thing.

Hey Bill,

I have added celery seed to my tuna salad, but never my BBQ sauce :)

I have some sauce in the refrigerator and could give it a try. How do you think it will affect the recipe?

Hey Greg,
     Being from K.C. here most of the BBQ sauces all have celery seed in them.
If you have a 8 oz bottle in the fridge. Add maybe a teaspoon to start with and you will be amazed at the flavor it will add to the sauce. Also will bring out the meat flavor. Let me know what you think...

Hey Bill,

I tried them in some cold sauce and didn't notice much difference. I need to get ready for a trip, but I will try cooking some in my sauce and see if I like the outcome.

That will bring out the flavor if you add to your sauce when cooking it. Also might have to add more to get a subtle hint of flavor. Seems like in the sauce my Mom made would use 3 t. in 24 oz of liquid.

Are you using whole seeds or powdered, I have the whole seeds.

Yes, Greg whole seeds. Did not know they had powder celery seed. Wow I also use the celery seed in cole slaw. Am not a big tuna salad person, too much as a kid. Being Catholic and the fish thing on Fridays was a drag. I do not do that anymore. The fish on Fridays as use the CLL as an excuse. lol

I have to tell you I'm making this stuff right now for a company BBQ competition this weekend. Simmering on the stove this smells REALLY REALLY good! I'll have to let you know after the weekend how it goes over.

Yes 1 1/4 cup apple juice and 1/3 cup apple cider.

I like the sauce. The event wasn't well organized and judged (first time they put it together) so I couldn't get good feedback. I served the sauce cold and my personal opinion was that it was a little bit too far on the tomato/ketsup flavor side. But when it was warm the night before I didn't have that feeling and really enjoyed it. I'll definitely try it again with a smaller party/group of people at my home but I need to find some of that tamrind sauce. Know where to find it on the internet? I found lots of different kinds but wasn't sure what you most recommended.

I think that the Tamarind is very important to making this sauce. Also if you like a sauce that is less sweet you can add a bit more apple cider vinegar or lemon juice. If you want a bit more bite and heat add more Cayenne pepper.  While the sauce is a bit sweet, it is not sweet like other sauce you find and you should taste a bit of the heat from the cayenne.

I find that when the sauce mellows after it cools for a day or so in the refrigerator and the taste improves over time.

The Tamarind can be found in the refrigerated part of most Indian grocery stores. I also found it online for $5.00, but shipping will cost you an additional $6.00. I like the Deep brand (Deep Tamarind-Date (Sweet & Sour Sauce), see photo below
