Title: Cut down a red maple yesterday

And cut some of the smaller branches into chunks that will fit into the wood pan on the smoker.  How long do I need to let it dry out before I can use it?  The tree was alive, just leaning dangerously towards my neighbor's mobile home.

If you chunked/chipped it, probably this Fall.

If it is in ready to use smoker size pieces you should be fine in a few months. I have been smoking with Hazelnut that was a live tree in August. I had cut it to fire wood size length and have been keeping them under my workbench in the garage. When I needed to smoke I cut some to block length and split them in half. I haven't had any issues.
