Cleanliness is Important

I got lazy and stopped cleaning the cooking rack holders on the interior walls.  When the food took on a foul smell and taste, I searched for answers.  More than one trip through the dishwasher was needed.  The dishwasher smelled like the nasty food for a couple more cycles.  I learned my lesson.

Amen to that.  I don't run mine through a dishwasher but do clean off the loose stuff.  Racks do get a thorough cleaning.

I would do both.  You will be amazed at the stinky residue in your dishwasher.

I run my racks and holders through the dish washer every time after I soak in a tub of hot water and remove the heavy nasty stuff.    Just go over with a SOS pad then washer.

A nice clean smoked salmon confirms that cleaning the racks is very important.

I would guess with fish it would be more important than with pork or beef.

It seems like the original instructions with my smoker talked about cleaning the racks.  I read an article about the most successful BBQ joints in Texas.  The one thing that set them apart was cleaning the nastiness from the inside of the smokers on a regular basis.
