4 or 5 Brisket Smoke
« on: May 23, 2016, 12:26:09 PM »
Has anyone smoked 4 to 5 briskets on one cook. I would love to hear about your cook, temps, cook time, did you rotate racks, whatever you have to share.

Thanks
Doug

Not brisket but maybe this post may help.  A little.  12 racks of ribs is a lot of meat.

4-5 briskets in a #4, I would think, should be no problem!  Keep them as high as possible, and possibly rotate bottom to top halfway-through (or just monitor temps individually, pull and wrap when they hit your desired internal temp).  That's a heluva big box!

I have done 2 (total 26lbs) in my si2.  @ 225 they took right @ 15 hrs (brined). Top rack corner to corner & 1 right below useing the opposite corner to corner. Probed the lowest one & checked the top one when i pulled the lower one. Both were ready @ the same time. They were both equally as good as my singular brisket cooks.

Just did two and 4 pulled pork butts and having a heck of a time trying to maintain temps. I had the same issue with 5 turkeys. I know this is a lot of meat but it should be able to handle it.

Sent PM again Tman, just in case Dave was telling me for you. Since you live in Dallas I thought we could just try and talk this through if I'm able to help and then you can share with group for benefit of all.

Tate, how did your butt's and brisket come out. Did you get your temp issue resolved?

I’m having issues getting my 4d to reach the set temps too. I’m trying to smoke 40 pounds of wings as I can’t get it past 200 during the first 3 or so hours. I set it at 275° And it’s at 214° after almost 4 hours. Any help? Thanks!
