Title: Model 2 temp keeps on rising well past the setting

Hi all.  I've got a Model 2 from 2016.  What's currently happening, is that when I set the temp, twice with one 3-4oz chunk of wood in the smoke box, and once without the smokebox at all, it's going way over the temp setting. 
First time, it was set to roughly 165 degrees.  When I checked on it 2 hours later, it was up to 318. 
Tried again, no food this time, just a 3 oz chunk of wood and a water pan, and set to 150.  Within 20 min or so, it was up to 250. 
Today, I removed the smokebox, and set to 150, and within 10 min, it was up to 238.  I waited another 5 min, and it climbed up to 251. 

I don't know if it is maxing out at 3xx degrees or if it will keep on climbing.  My poor salmon ended up as charcoal. 

Any ideas on how to fix this?

I had a cookshack that did the same thing. Had to replace the thermostat. Not a difficult repair to do yourself.

Make sure your smoker box temp probe is relatively clean of debris and coatings.

I will double check the temp probe for coatings/debris, as I hadn't thought about that.  I thought about the temp control replacement.  Waiting on a reply from the smokin-it.com site to see if they had any suggestions as well.  Thank you for the suggestions.
