UPDATE:  SUCCESSFUL CONNECTION!

Steps: 
- Turn on smoker
- Hold down Set and Timer (button next to it that has the little clock on it) for 5 seconds until blue light above it starts blinking fast.
- Two steps above set the PID back to factory settings.
- Go to app, open up your smoker, click the 3 horizontal line icon on top right, click Device, click Delete Device.
- Turn your wiFi down to 2.4 GHz
- Go back to app and add device.  It will walk you through the initial steps to set up. 

It connected right back up for me after the factory reset.  Hope this helps someone else out there.

Model 2 rack are listed as 14.5 in so I think the 14 in ones would work.  If they didn't fit, you could always bend them to fit with a pair of vise grips and a crescent wrench.
But the 12 skewers would certainly work.  You might loose one row off the grate, but shouldn't make much difference in long run.
