I did beef ribs about a year ago, turned out to be the worst thing I made.  Well idiot me didn't cut off the top fat cap OR split into ribs before smokin'.  Live and learn

I am so dying to try smoking some brontosaurus ribs.  I believe that they are done in a rack.

Really good info Dave.  Have wanted to attempt some beef short ribs but was sure about all of the details and what to look for exactly.  This video pretty well explains everything on rib choice.  Thanks.

Hey Dave, really nice video, I love short ribs when making beef vegetable soup. It is very simple recipe but was the way Mom made it, the secret flavor is cabbage chopped up. I cannot wait for winter. Also tried grilling them on the little weber and they were tough as shoe leather.
