Time for a pork butt

Isn't it always time to smoke a pork butt?

With the #2, I can now smoke one anytime I want. No more waiting for a day off or the perfect weather to sit outside for 12 hours chopping wood and tending a fire......whew, I got tired just thinking about it  :o

Got out my favorite rub and went to work  (no binders just rub)


In the fridge it went until the next morning.
Look how the rub almost turns into a wet marinade


Went about 6 hours at 200 and foiled at 152 internal. when foiling I added about a 1/2 cup of beer and some salt for the remainder of the cook. Used two chunks of apple wood. Small chunks mind ya  8)
Wife got off late so set the smoker to 140 for a hold


Came out real nice

After eating the pork butt we just smoked, pulled pork is a no brainer. Take it off the smoker, eat it with fresh onions, pickles and sauce. Day 2, sandwich time. Pepperidge farm onion and poppy seed buns. Buttered (real butter) and grilled on the flat top. Layered with your favorite sauce, fresh onions and pickles if you like.  Day 3, my favorite day, fresh corn tortillas, also buttered and grilled on the flat top. Pico d Gallo.
Fresh guacamole spread on the tortillas. Heaven.
