Title: How to process Pork Loin after cooking?
Post by: Papa Rick on November 06, 2019, 03:32:55 PM
First time smoking Pork Loin.  I have got four pieces approximately 4 1/2 lbs each.  How should I process this as far as putting it in the freezer.  Is it alright to slice it up into small sandwich slices and freeze or no?

Never done loin but roasts I vac seal whole for long term storage; if I am going to be making sandwiches in a week or so, I hard chill then bring out the meat slicer and vac seal after slicing then freeze till needed.

Thanks David, this is what I did after I read your post.  Sliced some and then vacuum sealed a whole one.  I appreciate it.
