Itttsss Showtime!!!

 :) After a long and agonizing wait (actually just 6 days), the beast has arrived! I just started the 4 hr seasoning run. Will report later as things progress............By the way, anybody need four casters, I got the cart and don't need them, good deal...........free.

After doing all this reading, its as expected, looks and feels pretty solid. I just finished the 4hr run, as advised, did not check any temps, just let er cook.  Plan to do a small butt Fri. going to give the manufacturer and seller the benefit of the doubt, I'm just going to probe the meat and set it for 200deg. and see what happens, hopefully it'll do ok. Plan on 4oz wood.

Sounds good, Joe, but set her to 225 for a butt. ;)   Seasoning smelled good, huh?

I been cookin' on 240-250 for years, be hard to change but I'll try, I'll set the temp on 225 and see what happens. By the way, maybe off subject a little but what is the weight limit on the cart shelves?

240 works for butts, too.  Don't go higher than that.  I just mentioned 225 because you said 200 (that would take a long time).

Not sure of the weight limit on the shelves.  I set my Auber on one, and cooking pans on the other with no issues.  Just make sure they're in the slots and pushed to the back (inboard).  I wish they had a way to lock them in, once deployed.  I've been thinking of an easy mod, but nothing's hit me yet.

I used to think so too, Ed, but have cut out some time by pulling them out at around 195-196.  They continue to cook to over 200 when wrapped and resting, and I can't tell any difference in the tenderness or moisture.
