Had time for a quickie

I got my #2 Friday and was able to season it Sunday afternoon. I thought I'd try something quick so I brined some chicken thighs with Divotmakers brine and threw them in at 250 for 2:15. I checked them with my pen and had 170 IT. Here's a pic!

They are Tony. I used hickory. I didn't use a rub or season them other than the brine but they are still delicious. That is my first smoke so I have a lot of things to try!

That is a great 1st smoke. These smokers are amazing and produce great Q. The SI will make you look like a pro in no time.

Looks may be deceiving, but it looks like they crisped up nicely.

No the skin was rubbery. We just ripped it off. It's not that big of a deal to me but I do love the cracklings .
