skin the salmon?
« on: October 14, 2023, 11:03:41 AM »
Hi ! Gary here, Northeastern Québec. I mostly smoke trout and use a Little Chief. Grocery had huge special on salmon, so before I try smoking it, pictures I look at show chunks with skin still ON. Is this normal ? Thanks for your time .

I leave the skin on, it helps to keep the pieces intact.

Makes good sense.

Indeed it does, but it's not likely to get crispy if you're smoking it.  I think if you took the skin off after smoking and crisped it up in a cast iron pan, it might taste pretty good.  I tried that once but I couldn't keep the skin laying flat in the pan.
