Life hack

This wonít apply to everyone, only to people in cold states, and only in the winter.
But here goes: I really didnít want to get up at 3:00am to put in the Valentines pork butt. Especially since itís supposed to be 8 degrees outside by then. So I thought, rather than have the butt taking up space in the fridge, Iíll put it in the smoker, along with the wood chunks and apple juice. Then set stage one at 38 degrees on stage one for six hours, using a tiny amount of heat to keep everything from freezing, then begin the cook with stage 2. Maybe this is common practice, but Iím feeling pretty sharp.

Turned out awesome. Wish I would have started it a couple hours earlier, but it was worth the wait. Iíll be using this method again for sure.

It is a great hack! I do that often during my Wisconsin winters and sleep like a baby without having to start cooks in the middle of the night.
