I finally got my dry aging project going. I think I got the right seal on the meat to the bag. Here is a shot of the first day right after sealing.

Sweet! That does look like great adhesion, so you should be good to go! You are in for a treat with this!
I am a week into my second aging, picked up a 15lb prime rib primal. Can’t wait for it!

This rib weighed in at 15.85 pounds. There are a couple of small areas where the bag is not completely tight to the meat but i got easily 80-85%. I am really looking forward to this!

If you want consistently better adhesion, slide it into a leg of pantyhose from the start. You can remove it after a week or leave it on the whole process. I gave not noticed any adverse effects either way.

Finished my 35 day dry age and the results were terrific! I will definately do this again. The increased tenderness and enhanced flavor profile are worth the wait. I ended up with 10 pounds of meat after trimming.

Smoked a dry aged prime. Wow! If you have been on the fence about dry aging, just do it. You will not regret it!
