Adjusting cook times
« on: February 20, 2023, 12:21:55 PM »
I posted this several years ago, but thought it was worth repeating for those who might not know.
I am getting ready to double smoke a ham. Instructions call for 20 minutes per pound at 325. It is an 8 pound ham, so I take 8 X 20 X 325= 52,000.However, I smoke at 225 so I take the 52,000/225=231 minutes or about 4 hours.
Hope this helps some of you.

Thanks Brian. I am sure some folks new to this will greatly appreciate it.  I know I did.  Wife insists on all hams be double smoked. Your formula works well.

You are most welcome. On a side note- cherry works well for us.

I have a box of wood with many varieties in it. Have not used the cherry yet.  May give it a try, thanks for the advice.

I really like cherry... it's one of the four staples I keep on-hand along with apple, pecan, and hickory.

Cherry also helps darken the color of the bark on pork and really gives turkey skin a nice dark color.
