Remove the membrane or not
« on: April 06, 2022, 09:45:45 AM »
I was just reading an old post about whether to remove the membrane on the back of your pork ribs. If it bothers you to have it on there but you are concerned about losing moisture by taking it off, just do a simple cross hatch cut on the back side with the tip of a sharp knife. Simply take the tip of your knife and score the bone side at an angle across the bones with cuts about an inch apart and then score 90 degrees to those cuts an inch apart creating an “X” cross hatch pattern. This way after they cook, more moisture will be maintained and you won’t even notice any chew of membrane. Hopefully, you understand my attempt at an explanation. 😊
