Venison roast

I have the Meat Eater cookbook from the hunting show and tried his roast recipe several times with great success. He says to bake in oven but the smoker just makes it that much better.
Coat in olive oil and then get a heavy coat of salt and black pepper.
Cook at 200 until IT 125 degrees. Tent with foil and rest for 10-20 minutes.
It has been very good in the oven but now my new smoker makes it amazing

That looks like a great roast! I love a simple S/P rub to let the flavor of the smoke and meat standout!

Nice Justin!  I bought the Meat Eater cookbook for my son last year--reckon I need to get a copy for myself!
