Cilantro Lime Cole Slaw

This has become our go to slaw for pulled pork.  If you’re interested in a no mayo alternative, give it a try...

3 cups Cole slaw mix (fresh in the bag type)
1/4 cup diced red pepper (optional)
1 fresh jalapeño (seeds for heat as desired)
1/4 cup olive oil
1/4 cup chopped cilantro
1 Tbs rice vinegar (apple cider vinegar substitution)
1 tsp fresh lime juice
1/4 tsp garlic salt
1/4 tsp onion powder
1/4 tsp cumin

Thanks for the recipe, Jim!  Looks really good, except the cilantro...lol.  I'm one of those folks that gets a strong metallic taste from cilantro; tastes like licking a tin can lid!  Most folks love it, though.  I do really like the "no mayo" slaw!  Folks on here will vouch for my intense dislike of mayo!  :o

Totally understand Tony.  In quantity I get only what I can describe as a soapy flavor from cilantro.  There are plenty of suggested substitutions for it, parsley, coriander etc.  Not sure what direction any of these would take it?  I think it would still be good without it.  Give it a go and ditch the mayo!  :)

That's my kind of cole slaw. I love cilantro, so I would probably double it! :P
