I was recommended this smoker from a question I asked on reddit. I am looking forward to trying the Model 2.
I own a spice business and we are looking to do our own salts and smoked spices. cant wait to try this bad boy out. we have a long history with catering for events with our fire house.

Welcome.  I'm sure you'll enjoy the #2.  The best advice I can give is to go easy on the amount of wood you use.  I only use 4-5 oz of apple and/or cherry wood for most smokes.  Start by weighing it out so you know how much to use.  Too much wood will give you a creosote flavor.
