Well, I’ve had my SI 3DW for 7 days now and I’ve made chicken thighs, a smoked meatloaf and last night, spare ribs. The first two were very good but the ribs, not so much. Actually, the taste was really good, but I blew it by over cooking and drying them out somewhat. I did try to cook them differently than the past and I blame it on that. Fortunately, I bought two racks, so I’ll fix the next rack on Tuesday my tried and true way and I’m sure they will be great.

Nice pull back on the bones. Not a lot of mass on ribs so it is pretty easy to over cook. But they are still tasty.

I generally smoke baby backs for 4 hours at 225 and spare ribs for 6 hours at the same temp. They both come out juicy and tender. It’s difficult to cook to internal temp with ribs due to the lower meat mass and the bones.

Yep Paul. I had them on for 6 hours and 15 minutes after putting on a second coat of sauce. That was the first time that I didn’t really check early enough or wrap for an hour or so before unwrapping and saucing. I should have known though because they were a smaller rack. I just should have tested sooner. I’ll get use to this smoker and they will be great in no time, starting tomorrow night! 👍
