First one huh

Well here's a fairly simple as close to true Italian style dough as you get.

 Mix 1.5 C warm water and a half pkg of yeast until it proofs (I use a jar)

Now add that to:
3 C regular AP flour
1.5 C cake flour
1 T kosher salt
Knead this into a nice ball and then put it in a lightly oiled bowl covered on a counter for at least 4 hours
Now punch it down and separate into three oiled bowls cover and let it rise 4+ hours or overnight
Should only take about 7 minutes min to cook
Oh and if you add some garlic to olive oil it's great brushed on the crust here's the trick though throw some minced garlic on a cutting board and sprinkle with course salt and use the side of your knife to mash it. Oh and maple breakfast sausage is great on here

I have found if you place the dough and leave in the refrigerator for 1-3 days, you will find that the dough is more workable and has greater flavor. Something to try on your next batch, I like two days.
