Title: Urgent Help Needed!
Post by: Berto on May 15, 2021, 09:40:31 AM
Need help with a serious, urgent question.

I have about 60 pounds of pork butts on the smoker. Last night, about 8 hours ago, the butts all hit 150⁰ so I wrapped them with aluminum foil and went to bed. Sometime after I went to bed, a storm rolled through and reset the GFI in the outlets in my house and turned off my smoker. Upon waking up, I found this. The butts all cooled down to about 140. I restarted the smoker, but now trying to find out if the meat is ruined. Any help or advice?!?!

There are around 100 people expecting to bed fed later this afternoon. :(

Quick correction: I just double checked and 2 of the butts dropped to 126⁰ and 4 are around 134⁰-136⁰. An I up the creek?

I would not be to concerned as the meat couldn’t have been below 140 for an extended period of time. The key thing at this point is to get the IT of your meat up to 200*. That will also kill any bacteria that may have started to form.
I would turn my smoker up to 275*-300* to expedite this process. Good luck and let us know how they turn out.
