Tri-tip in the 3D

Used the 3D for some tri-tip today. The tri-tip comes from a local ranch here in New Mexico that I found a few months back - they have shop in town and the quality is outstanding! I think its comparable to American Wagyu, marbling has been great on the different cuts I’ve had and most everything has been fork tender to cut!

I used some hickory chucks (not my favorite but it’s what I have left from my box, and rubbed with Oak Ridge BBQ Carne Crosta. Let it get to 130* internal and then finished with a cast iron skillet sear. Came out great!

That is a great looking Tri-tip. Nice work. That will make some great sandwiches as well.
