Exactly!  There's a lot of misconceptions out there about nitrites and nitrates, and misunderstanding.  The more education we have, the more comfortable folks will be in using this extremely valuable tool!  Again, thanks Brian - and keep good stuff, like this, coming!  Your experience with curing and charcuterie is very informative!
