I've used my #3 outside when it was close to 0 deg and it got up to smoking temps a little slower than normal, but didn't take that much longer.
BTW- I always start with a cold smoker so the meat can absorb more smoke before it gets over 120 deg.

Introductions / New Member from Fort Worth, TX

Hello everybody,

Kevin here from Fort Worth, Texas.

I bought a model 2 five or seven years ago. I have only smoked dear Summer sausage in it twice, and a half rack of baby back ribs once in it. It was fairly cold in Kentucky when I smoked the summer sausage and I had a hard time getting it to the temperature I wanted with the analog control. So both times I ended up finishing the summer sausage off in the oven the last 30 minutes or so. But amazing flavor! Iím looking to do a bypass of the controller and put a switch on it and install the digital Wi-Fi controller from Auber.

God bless you guys!

You are good to go on the element. And to answer your question, first to be honest and admit to leaving the door open and running. And you are not an idiot. Smoke on!

The first to run their smoker all night or the first to be shameless enough to admit it on the forum?

I just turned it on and it took 2-3 minutes to start seeing any red, after 5 to 6 minutes it looked like this.  Not sure if this is "bright."  Anyway, it looks uniformly red.

That is a first!  I would remove the back of the smoker and check all the wiring, replace anything that doesn't look right. As for the element, if the glow is BRIGHT and uniform with no dark spots, it is OK.

I assume this means an onion in addition to wood?  What wood would you think would be good with onion?

Definitely sounds like something worth trying.
