BTW- I always start with a cold smoker so the meat can absorb more smoke before it gets over 120 deg.

Kevin here from Fort Worth, Texas.
I bought a model 2 five or seven years ago. I have only smoked dear Summer sausage in it twice, and a half rack of baby back ribs once in it. It was fairly cold in Kentucky when I smoked the summer sausage and I had a hard time getting it to the temperature I wanted with the analog control. So both times I ended up finishing the summer sausage off in the oven the last 30 minutes or so. But amazing flavor! I’m looking to do a bypass of the controller and put a switch on it and install the digital Wi-Fi controller from Auber.

I just turned it on and it took 2-3 minutes to start seeing any red, after 5 to 6 minutes it looked like this. Not sure if this is "bright." Anyway, it looks uniformly red.

« Last post by old sarge on September 30, 2023, 10:18:10 AM »That is a first! I would remove the back of the smoker and check all the wiring, replace anything that doesn't look right. As for the element, if the glow is BRIGHT and uniform with no dark spots, it is OK.
