I found a video today that makes me feel pretty stupid. I have been wrestling bellies into a secured rolled shape for panchetta. My problem is that I learned from watching American YouTube videos. Cool method. Too bad I don't understand Italian. There were some other videos that looked interesting too.

That's pretty neat but I think I will leave all this fancy stuff to you experts. Butts, ribs, brisket, ham, fish and some lamb for me. Maybe someday when I feel courageous.....
