Turkey Legs

Has anyone done Turkey legs and have any tips?
- Brine?
- Rub?
- Temp?
- Foil the tips?
- Too rack or bottom?
- Does using the jerky fan result in skin being less rubbery?

I use a “Disney Land” style recipe that turns our really good! Gives the turkey leg a little more of a hammy flavor. You can find the recipes on line for this, but I think I’ve used this one

I’ve used this though, a number of times and really enjoy it. I can’t find the link, but I have it in my recipe book -

2 turkey legs about 1.5lbs each
Brine in 1gal bag over night
2 cups butter milk
2 cups water
1/2 cup Kosher salt
1/4 cup turbinado sugar or brown sugar

After the brine, I rubbed with Memphis Dust, or something similar. Smoked at 250* with about 3oz of wood to your liking (i used cherry and hickory), smoke time was just over 3 hours, cooking the legs to a temp of 175*.

Really good turkey legs. I’ve done a turkey breast the same way and enjoyed it.
