Title: Pork belly burnt ends

First time doing pork belly burnt ends. Planing on smoking at 250 for 2 hours then  brown sugar  and sauces in the oven for another 2 then drain re glaze on broil for a few min before serving. ¿¿¿My question is how much wood??! I am thinking 1.5 oz might be enough for just under 3 lbs

1 1/2 oz sounds good. Better too little wood than too much. Enjoy!

Yea that is definitely the case! Especially with small cut pieces. I went with 1.5 oz of Apple for two hours at 250. Then went to add brown sugar and found out my brown sugar had gone bad. Ended up using maple syrup. Covered them in aluminum foil in the oven in at 250 for 2 hours. Drained the fat added a bit more maple syrup. Then uncovered and broiled them right before we ate them. Came out great! Unfortunately I forgot to take a pic. Used a jalapeño sweet spicy rub. They were a great combo of sweet savory and spicy all in one!

Mmmmmaple! Fine substitute! Curious though, what makes brown sugar go bad?
