Bacon 4 Ways

I got the itch to make some bacon so I got 2 pork bellies and a pork loin from Costco and went to work. The first way I did it was to use Pork Belly's recipe but I used maple sugar instead of regular sugar. Can't wait to see how this turns out. For the second I made Black Forest bacon and used a mix of white pepper, nutmeg, mace, cardamom and white sugar in the mix. For the third I just did the white sugar mix and added pepper after curing. For the Canadian bacon I used a mix of spices and did a wet brine. Salt and pink salt for all of course! Smoked all of them yesterday. the 'ol number 2 was plenty full. I cold smoked with hickory for 3 cycles and then hot smoked at 200 with some sugar maple until the IT was 150 deg. The results look great. Taste test goes tomorrow at breakfast but if the belly bacon turns out anything like the Canadian bacon, I will be a happy man indeed.

Had the belly bacon this morning and it was great as was the Canadian bacon that I had for lunch. :)
