Model 1=Perfect Christmas Prime Rib!

Thank you for the forum and the excellent source material! Followed this recipe (used Penzey’s English Prime Rib rub) and ended up with an awesome cut of meat. Also made a caramelized onion/black garlic gravy to go with it.
