I'm getting ready to do my first smoke (pork shoulder) and have no idea how to apply the rub. I've seen a lot of people say they use yellow mustard for a binder. I'm guessing a binder is something to make the rub stick to the meat? So put a thin or thick coat of mustard, then sprinkle the rub on, do I then rub it into the mustard or just leave it sprinkled on? I'm sure everyone is different but how much rub do I sprinkle on? I've got the small thing of Famous Dave's Rib Rub, 5.5 oz I think. On a 6 or 7 lb shoulder, how much of that 5.5 oz of rub would you use?
