Smoked Steelhead for Christmas

Hi,

My name is Ken and I'm new to smoking, long time griller.  I bought a #1 this fall and I'm still learning.  The very best thing to date was smoked steelhead for Christmas snacks.  I live in WA and steelhead is very popular here.  The flavor is mild and the fat content is high.  Costco has it for $8.99 but you have to buy a big package. The basic recipe came from reading this forum.  My test was a 1 pound piece from the thick end.  Here is how it went.

Brine: 1 part Kosher salt plus 4 parts brown sugar - Cure overnight
Rince well with water
Set the fish on a wire rack in a cool place for 3 hours
Brush with maple syrup
2.5 oz of applewood chunks
Smoker temp: 170
Fish IT: 138
Refrigerate until served
No Leftovers, Everyone loved it.

Exactly how I do salmon Ken, simple and always good.  Just happened to make it yesterday...😀

Welcome Ken.  The meal looks good. If you get the time, head to the intro section and get a proper welcome and maybe tell us a little about yourself. Maybe even come up with a signature block.
