Simple jalepeno poppers

I've tried the ABT's, Wolf Turds and some other concoctions, and really didn't like any of them all that well. I found a simple recipe for poppers.
24 jalapeno's; 8 ounces cream cheese softened; 8 ounces shredded cheddar; 8 slices bacon, fried and crumbled. I cored and seeded the peppers, made the mixture and stuffed each pepper. Smoked at 225 degrees for 2 hours over 1 ounce of hickory.
These were absolutely killer. Everyone raved about them. Sorry no pictures, I was too busy finishing a complete meal for a family/friends gathering.

I just picked up some peppers today to do something like that. Thanks for the recipe, I'll give it a shot. I love Cream Cheese in the peppers, was concerned that it would break down getting so hot.

Did you have one of those pepper racks that stands them upright, or just lay them on the smoker racks? Any problems with leakage? The recipe sounds good.

Yes, I use a pepper rack. I also use a tool to remove the core and seeds. Cut the top off, a quick twist with the tool and all the "guts" come right out. Doing them this way, leaking is not a problem and frying, then crumbling the bacon and putting it into the cheese? Well, it gives you that great flavor without any hassle. If you don't have a pepper rack, you can put tooth picks sideways through the pepper and suspend them on the wires of your smoker rack, but you've got to be real delicate and careful you don't knock them off. That is if the peppers aren't too "fat".

I do like wrapping them in bacon. I've done it with raw bacon and they cook up fine enough, but soft. Also pre cooking the bacon to where it's still flexible. Then you end up with a more cooked result after the smoking.

For dinner tonight I finished up the Brisket that I heated diced up with some leftover potatoes. But I did smoke some Bacon Wrapped JalapeƱos. Really good, one was actually quite HOT!
