Title: Bluegill/crappie

Has anyone tried smoking panfish? Any ideas would be appreciated

STOP, Walk away from the smoker put the fish back in the fridge.

Mix 50/50 ratio of corn meal and flour seasoned with salt and pepper and dredge the blue gills, whole is fine, fillets are better.

Cook in a heavy skillet on medium high heat in a 50/50 mix of Salted Butter and Duck Fat.

Lightly salt the fillets as you serve them fresh from the skillet.

I regularly smoke White Bass and they turn out awesome. They make great Fish Brine and Awesome Fish Dip Recipe (http://smokinitforums.com/index.php?topic=2061.0). The White Bass fillets are closer in size to the Crappie fillets than the Blue Gills. If the blue gills are pretty thin, they won't take that long to smoke. So, you'll have to be careful to not over cook them.

If you are like me and get so many fish, I am guessing you still do plenty of fried fish similar to how Brian described, but are just looking for something new to do with them.

I am getting soooo ready to get out open water fishing again. I spent the weekend at my lake place, but the water is still really cold and the fish are pretty lethargic still. Better weather is coming though!!!

Your right, I get a lot of 'gills and crappie just wana try something different .thanks for the help , will try it.

Belongs to my fishing partner and shop made by a welder friend down in Gonzales Louisiana.  It will fry some fishies :) :)
