Title: First bacon project

I went to the local Asian market and picked up a 18lb pork belly. I was kind of set back with the fact that it came with ribs attached, I did not expect that so I had to youtube how to remove the ribs. It was easier then I expected and turned out pretty decent.

1st pic is the 23"x13" 18lb belly w/ribs

2nd pic is trimmed belly

3rd pic is the slab cut in two pieces 6.5lb & 5.5 lb in cure (1tsp. insta#1, 1/2 cup kosher salt, 1/2 cup brown sugar on each slab.
 I will be adding 1/2 cup of maple syrup to one of the bags when I get home tonight (I had run out of maple syrup and didn't realize it).

7 days in the cure flipping daily. Then 24 hours in the fridge uncovered to form pellicle and off to the 3D for some sugar maple love.

I will update with pics when ready to smoke.

Finished product was a success. I will be doing bacon again in future :D

That's killing me, Don!  I'm hungry, right now, and just didn't need to see bacon that looks THAT good!  :P
