Expresso Spice Rub Recipe
« on: July 23, 2013, 07:51:54 AM »
Here is a recipe for a rub that I have enjoyed that I thought I would share with all of you.

Expresso Spice Rub

Makes about 1 cup of rub.

Ingredients

1/4 cup  chili powder
1/4 cup finely ground espresso-roast coffee beans
 2 tablespoons sweet paprika
 2 tablespoons dark brown sugar
 1 tablespoon dry mustard
 1 tablespoon salt
1 tablespoon freshly ground black pepper
 1 tablespoon dried oregano
 1 tablespoon ground coriander
 2 teaspoons ground ginger
2 teaspoons chile de árbol powder or cayenne (optional)

Directions

Place all the ingredients in a bowl and thoroughly mix with a wisk.

Use like any other spice rub on your preferred cut of steak, or even on a beef or pork roast. The longer the rub is on the meat the better!

A couple of notes:

- Regarding the coffee beans: The flavor of the coffee will be intensified when its cooked into the meat, so don’t try to use something like Folgers or instant coffee on this – spring for the good stuff. I used a nice expresso ground coffee.

- I used smoked paprika instead of the sweet paprika for an extra depth of flavor.

- If you aren't a fan of hot spices you can leave out the cayenne pepper. I noticed that this rub takes on a hotter character when used in the smoker as opposed to grilling.

Enjoy!
Happy Smoking!

Sounds like a good one, Steve!  I tried coffee in a rub for the first time recently, but couldn't taste it - just made a really nice dark bark.

A word of warning - be careful about bringing up coffee flavors around Spresso (Zed) and UWFSAE (Joe)! ;D   Those guys take their joe way serious!! ;)
