Is it safe?

I smoked a few sausage links purchased from the butcher at a temp of 165 for roughly eight hours. I wanted to cook as low as possible so that the fat does not burn off. My concern is that it may not be safe. Any suggestions as I hate to toss $32 in the trash. My final cooked temp is 165.

pork sausage?

pork is considered safe at an internal temp of 145

I think so. I was concerned with the time to cook but it did reach a temp of 145 fairly quickly just took all night to cook.

no need to toss it no matter what

if you feel unsure you can always heat it through again .. or slice it and fry it.


but if you had it going all night and had it set to 165.. i can't imagine it would be undercooked
