Title: Injecting brisket

Just a quick ?.Gonna try a brisket in my#2 this weekend and was wondering going to try injecting it and was wondering should I inject the night before when I rub it down or should I inject prior to going in the smoker.Thanks in advance.

Hey Pdub, definitely inject the night before.  The point of the injection is to tenderize and moisturize the meat, so you want at least 12 hours with the injection in the meat.  Inject, rub (I like mustard for a binder), wrap tight and rest in the fridge.  It will get very happy there. ;)

Inject fat side down and whatever leftover injection you have put in a plastic bag with your brisket.
dont put too much rub on the meat. A nice coating.

Great point about the fat-side down, Ed!  Keeps the injection from running out as bad.
